Breakfast is the most important meal of the day, as it will fuel your body for the day ahead. In my household, the mornings are very hectic with trying to get everyone ready for the day, take care of the dog, make lunch, etc. In the past, I would just throw in an English muffin into the toaster and I’d be set! I turned to Pinterest for inspiration and ideas of some easy breakfast foods. I stumbled across egg muffins, which you can personalize with any healthy vegetables you would like. Pinterest suggested peppers, muffins, spinach, cooked sausage and more!
To start with your egg muffins you will need a muffin pan, along with your ingredients. I decided to dice some peppers and mushrooms for my egg muffins. Once in the pan, I topped the muffins with some bacon bits.
