Nana's Updated Chicken Noodle Soup - Good for a cold!Why is this the perfect Chicken Noodle Soup?

We have a 3-year-old little girl and she is very smart. Before we knew it she was in need of a bigger challenge than I could provide for her. I am trying to work from home and maintain said home every day. She needed not only socialization but challenges for her brain as well. The answer for us was preschool.

There is one big drawback to sending your little human off to preschool…germs. Because of the germs we get sick a lot. It feels like there is a cold in this house every other week. This week included which is why this is the first post of the week.

Being that I am currently breastfeeding I cannot take a lot of medicine. My husband loads up but mommy is left to fend  for herself, without glorious cold medicine. I have found the one thing that makes me feel better is my Nana’s chicken soup. I add my own twists and make it yummy. It always makes me feel better.

With Fall here and Winter coming I figured what better recipe to share this week than this! I know I will be making it a lot in the next few months. Hope you love it!

This is traditional yummy chicken soup. Have a cold? It will make you feel better without a doubt. I do make my own broth a lot, but for this recipe lets just use Rotisserie chicken because when you are sick, lets be honest, nobody feels like making their own broth! Updates for recipe are below!

Ingredients

Instructions
  1. Prepare Chicken. Put all of your chicken in a bowl and put to the side
  2. Bring a large pot of salted water to a boil. Add olive oil and egg noodles. Boil for 8 minutes. Drain and rinse under cool water.
  3. In a large soup pot or dutch oven combine broth and poultry seasoning. Bring to a boil
  4. Stir in Celery, Carrots and Onion. Reduce heat, cover and simmer for 15 minutes.
  5. In a small mixing bowl mix cornstarch and water. Stir. Make sure cornstarch is totally dissolved.
  6. Add cornstarch mixture slowly stirring constatnly.
  7. Add chicken and noodles to soup. Simmer for another 5 minutes.
  8. Dish into bowls, cover yourself up with a blanket and enjoy!
Recipe Notes

For the updates, I tend to stick with spicing it up!

I love adding a teaspoon of red pepper flakes and giving it some heat. I also like to try different herbs and see what works. I have found I love oregano, parsley, and dill.

I have also added turmeric, red chili paste, garlic, lime and coconut milk to give it a bit of a Thai flavor.

I love this recipe with some sourdough crusty bread on the side.

It is perfect if you have a cold or if it is just cold outside.
