Sautéed Shrimp with Pearl Couscous

Love Shrimp? Looking to add a powerhouse of veggies and grain to your diet? What about couscous, ever tried that? If you have answered yes to any of these questions you will love this dish!

I know when you are tired and work is crazy and the kids are even worse it can be tough to look outside the dinner box. Most things seem WAY too complicated but this elevated dish is not it is almost easy. It can be made in one pot or two, totally up to you! Enjoy this alternative to pasta and rice tonight.

I found this amazing dish when I was trying to find things I wanted to eat that were healthy when I was pregnant. I know you will love it as much as I do!

Servings: people
  1. Follow the instructions on the couscous box. Yes, I use boxed, shame face here. Add water and couscous to pot. Bring to a boil.
  2. Take couscous off the heat and cover. Let sit till done about 10 mintues. Again make sure you cook it with the directions on the box they may vary
  3. Defrost frozen shrimp. *Please feel free to use fresh, it tastes better in my opinion but frozen tend to be more cost effective so that is what I mostly use.
  4. Place olive oil in large high sided pan and heat.
  5. Add shallots and garlic. Cook for about 2 minutes, till soft.
  6. Add shrimp. After about 2 minutes add white wine, salt, pepper, and oregano
  7. Turn on low heat. Let sautee for about 5 mintues with stirring occasionally
  8. Add tomatoes, olives, and spinach to shrimp. Add lemon zest and juice and fold to combine.
  9. Let simmer and stir occasionally until the spinach is wilted and the tomatoes are heated up.
  10. Add couscous and fold all ingredients together
  11. Serve immediately 🙂
Recipe Notes

I love the lemon flavor but if you would like a more subtle flavor do not add all the juice from the lemon either do one half or 1tbsp.

    1. I am that way with green beans any recipe that calls for them needs an automatic substitute. If you leave them out add a little bit of extra salt for replacement and you will still get that nice salty affect.
