Steak and Orange Salad w/ Sesame Dressing

steak-and-orange-salad-with-sesame-dressingWith the holidays happening I over eat. I think that a lot of people can admit overeating is a huge problem this time of year. Everything is rich and decadent. There are a lot of starches, rich sauces, and heavy meats floating around. Because everything is so decadent you can start to feel slow and sluggish.

There are good parts of those amazing foods that are good but when you put them all together ugh!

My recommendation? Find a great salad and use that for a dinner at LEAST once a week. It will help not just your belly feel better. I have also noticed that people tend to say, “I can eat poorly now because once the new year starts I have to be SO good.” Why wait? Why put your body through those paces!

I have found a terrific salad thanks once again to my go-to salad cookbook, Full Belly by Tara Mataraza Desmond. I was obsessed with this cookbook while I was trying to get pregnant. Definitely, while I was pregnant, and now after! The salads are one of my favorite parts for sure. This Steak and Orange salad with an amazing Sesame Dressing is perfection. This is because it allows you to keep the rich steak meat but use it in a healthy salad. It also gives some summer citrus during these colder winter months.

This salad is great because it is strong in iron, protein, calcium and vitamins A and C. Vitamin C is the so important during the winter months. Colds and flu’s run rampant and this one vitamin can help you fight the bugs.

Ingredients
For the Salad

Instructions
  1. Get that marinade prepped and ready
  2. In a small bowl combine rice vinegar, soy sauce, sesame oil, garlic powder, and ginger and whisk to combine.
  3. In a vaccuum seal bag or resealable bag place the steak and marinade together. Flip it around and make sure the entire steak is covered. Make sure all excess air is taken out.
  4. Let steak marinate for at least 30 minutes.
  5. For the Dressing, prep the oranges first.
  6. Use a microplane and zest one of the oranges.
  7. Using a paring knife slice the ends off of the oranges. Then slice the skin off of the oranges over a bowl so the juices that come off are caught. Do this to both oranges.
  8. Seperate the segments of the oranges and put to the side.
  9. In a small bowl combine zest and juice caught from oranges when peeling. Add the rice vinegar, honey, soy sauce, sesame oil, garlic powder, and fresh ginger. Whisk!
  10. Once combined, slowly drizzle olive oil while whisking briskly until it is thickened and shiny.
  11. Preheat grill to medium high. Take the steak and grill for 6 mintues on each side. Shifting it about every 3 minutes.
  12. Once steak has cooked for about 12 minutes take off and let the steak rest for about 10 minutes. Then thinly slice for salad.
  13. While steak is resting...prepare salad.
  14. Toss together Butter lettuce, orange segments, carrot slices, cucumbers, and scallions.
  15. Drizzle the salad with the sesame dressing you prepared. Then add rested steak to top of the salad. Sprinkle toasted sesame seeds on the top.
  16. ENJOY!
