Best Part of Christmas Cookies!

Most of you do not know this as it is not something I have shared very often on the blog  but I do quite a few jobs from home. One of which is a baker. I actually own my own at home baking company called Kristi’s Confections. Here is our Facebook page, Kristi’s Confections. I have a site and people put in orders for me to make specialty cakes, cupcakes and platter orders for parties…such a Christmas cookies and whoopee pie platters. I love getting paid to do something that I love. It is a big bonus but also a TON of work. The cleaning process of my kitchen and tools to before and after an order alone takes up to two hours.

Today I thought I would share one of the most popular things this time of year Christmas Cookies! I love them. I have the best memories of making tons of cookies with my family when I was growing up. My favorite part of the holiday food spread was the cookie towers. My mom and aunts each had a three tiered stand that they would fill to the brim with different kinds of cookies and bars. We have started a newer tradition since becoming an adult; all of the women in the family, who are available, get together and we have cookie day! It is quickly becoming something I look forward to each and every year.

So here are three of my most requested cookies for this holiday season.

Salted Chocolate melts with a Peppermint kiss – these cookies are melt in your mouth gooey in the middle and then topped with a peppermint kiss and salt. The mix sends all different kinds of textures and tastes into your mouth.

Lemon Shortbread bites – This was the first time I attempted this cookie. I wanted something to cut back overwhelming richness of the other two cookies. These are sweet but they are also bright. Kind of remind me of sunshine in a cookie. One of my tasters said “They kind of taste like a lemon Starburst”. I’ll take it!

Red Velvet Cookie Pies- these are essentially two red velvet cookies put together with cream cheese frosting in the middle. Think the best Oreo ever. My MOST requested and honestly the easiest to make so I thought I would share it with you today!

I know around Christmas every person in the world becomes a baker but I wanted to share one of my easiest recipes so you can too and they will be amazing!

PS: full discloser here…I only use the cake mix when I am SUPER short on time but they taste really similar to from scratch. Whatever cookies you make enjoy the process and kids can easily help with this recipe!

Instructions
  1. Mix all three ingredients together. Make sure you throughly mix them, you will most likely have little bits of the cake mix not mix in I squish these by hand. When you are done you will have a pretty solid cookie dough.
  2. Line a baking sheet with parchment paper. Use a teaspoon to measure out dough balls. Flatten slightly into a disc. Bake at 350 for 9-10 minutes.
  3. Let cool on tray for about 5 minutes then move to cooling rack. The bottoms need to cool.
  4. For the Frosting: Cream the cream cheese and butter together. After they are well combined add vanilla extract. Beat in 2 cups of confectioners sugar, this can be VERY messy. Add the 1 tsps of milk. Beat in remaining confectioner sugar. Some people add up to two more cups of confectioner sugar but I only add 1 to 1 1/2 more because I don't like it as stiff.
  5. Once cookies are cooled add a dollop of filling and place second cookie on top.
  6. Let the filling dry before eating, about an hour, this will make the PERFECT cookie pie!
