Mighty (easy) Egg Muffins

Cooking eggs every morning is time consuming, especially when trying to care for an active 8.5 month old, getting my husband out of the door and starting my work day. I turned to Pinterest for inspiration and ideas of some easy breakfast foods. I stumbled across egg muffins, which you can personalize with any healthy vegetables you would like. Pinterest suggested peppers, muffins, spinach, cooked sausage and more!
To start with your egg muffins you will need a muffin pan, along with your ingredients. I decided to dice some peppers and mushrooms for my egg muffins. Once in the pan, I topped the muffins with some bacon bits.
Ingredients
- 8 Large eggs
- Splash milk
- 1/2 Red Bell Pepper Diced
- 1/2 Carton Mushrooms Diced
- Sprinkle Bacon Bits
- Salt to taste
- Pepper to taste
Servings: Egg Muffins
Instructions
- Preheat oven to 350 degrees
- Spray the muffin pan with cooking spray, in order to prevent sticking.
- In bowl, mix together your eggs, splash of milk, salt and pepper.
- Add the diced peppers and mushrooms to the muffin tins, then pour the egg mixture on top.
- Once all of the muffin tins are filled, add your bacon bits.
- Cook for 20 minutes. Remove and enjoy!

You can now enjoy 12 health to go egg muffins for your breakfast!
Eat however many you like and keep the rest for later in the week. It makes things so much easier when that alarm clock goes off.

Yes, it’s great and the other day I added some turkey sausage with some chives. I try to avoid dairy, as I am still breastfeeding, but you can add cheese!

They are very easy to make. I just store them in a ziplock bag for the week and reheat in the microwave, very easy!
