Slow Roasted Chicken for the Busy MamaIf you are anything like me you are super busy all the time. Like no time to stop, no time to breathe but you still want to give your family a healthy and yummy dinner. When you have a thousand things to do around the house this recipe can come in very handy. You can work and have family time while it is baking in the oven. Here is a super easy slow roasted chicken recipe that will have your family asking for seconds.

It’s one of my favorite set it and (kinda) forget it meals. Very little prep time and cooking involved. Definitely a go to meal. Leftovers make great options too!

I like to serve with roasted veggies and rice or sweet potato. I recently made homemade loaded potatoes. Yum!!!!

Some of our favorite sides:

Stuffing with a mushroom gravy

Rice with roasted vegetable

Sweet potatoes and  Brussel sprouts

Roasted green beans and homemade potato wedges

Salad!

Ingredients

Instructions
  1. Place chicken in roasting pan or cast iron skillet.
  2. Season to taste. I tend to be very generous as it will cook off with basting.
  3. Drizzle olive oil (medium generosity here).
  4. Place in over at 300 to 325 for 2 to 3 hours. The thicker the breast, the longer the cook time.
  5. I check in periodically. Basting when it needs it to give it extra amazing flavor.
  6. Towards the last 20 minutes of cook time, place chicken on top rack and turn up the oven to 350-400 and let the skin crisp.
  7. Take out and serve with your favorite side dishes.
Recipe Notes

Please remember every oven is different. If yours cooks on the hotter side you might want to cover the pan or place on the lowest rack until just before it's done.

If you are looking for a variety in herbs try:

Rosemary, fresh lemon juice, EVOO, salt and pepper

Cajun seasoning, EVOO

Paprika, EVOO, salt and pepper

BBQ sauce, onion and a slow roast (yummo!)
